Friends of "In the kitchen with Lena" today I have a recipe suitable for every festive table, but also for when you want something filling, creative and tasty.
A very nice salad, which we "tweaked" a bit in our own way. So prepare yourselves with appetite and let's all go together to the kitchen for another tasty journey, always in the company of "Lena" products.
Boil the beetroot until tender and cut it into cubes.
Slice the avocado and grapefruit and remove the film.
On a platter, lay the arugula, place the avocado, beetroot and grapefruit on top, add the sliced onion, only the white part.
Shape the paste into small balls and roll them in the peanut that you have already broken.
In a food processor, combine the mint, honey, orange, olive oil and balsamic vinegar, pour over the sauce and serve.
